COVID-19 INSERVICE ASSIGNMENT
Overview: Intern will work to create an In-Service for either Food Service Staff and/or Clinical Staff (ie.
Nursing) related to proper COVID-19 sanitation procedures.
Competencies addressed:
CRDN 1.2: Apply evidence-based guidelines, systematic reviews and scientific literature.
CRDN 2.2: Demonstrate professional writing skills in preparing professional communications.
CRDN 2.10: Demonstrate professional attributes in all areas of practice.
CRDN 3.4: Design, implement and evaluate presentations to a target audience.
CRDN 3.5 Develop nutrition education materials that are culturally and age appropriate and designed for
the literacy level of the audience.
Instructions:
1. Research available handouts for these topics. You can use an existing handout that is relevant to
your 15-minute lesson or design an original one. Be sure to relate all sanitation procedures to
COVID-19.
o Topics to include in your in-service may include:
i. Dishwasher temperatures
ii. Pot Washing Sink – test strips
iii. Handwashing Sink – rules and regulations
iv. Countertops, carts – how to properly clean and sanitize
v. Trucks/Carts delivering food – how to disinfect and sanitize
vi. Nourishment Rooms – how to disinfect and sanitize
vii. Disposable trays – when to use/when not to use; how to dispose
viii. Staff dining rooms – sanitation
ix. Distributing commercial supplements/snacks while following proper sanitation
procedures
2. Develop a 15-minute educational lesson to in-service Food Service or Clinical Staff on your topic;
keep in mind your audience when creating the lesson.
o Be sure to include the objectives of your lesson plan
3. Create a pre- and post-test, with at least 5 questions to test knowledge. You can use the same
test for both.
4. Upload the completed assignment, including the pre/post-test, learning plan, and handouts to
the portal for this assignment.
